Ingredients:
2 pounds fresh green beans, trimmed |
2 teaspoons grated lemon rind |
3 tablespoons fresh lemon juice |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon olive oil |
6 green onions, chopped |
1/2 cup chopped fresh or 1 teaspoon dried basil |
Directions:
1. Cook beans in boiling water to cover 15 minutes; drain. Place beans in a large bowl. 2. Whisk together lemon rind and next 4 ingredients. Pour mixture over beans. Add onions and basil, tossing to coat. |
