Lemony Good Fruit & Chicken Salad

A delicious meal!
Ingredients:
1/2 lemon, grated peel of
1 lemon, juice of (3tbls)
1 1/2 tablespoons vegetable oil
1 tablespoon honey
1/4 teaspoon ground ginger
1/4 teaspoon curry powder
1 cup shredded cooked light meat chicken
1 cup cooked orzo pasta (1/3 cup uncooked)
2 oranges, peeled,cut into bite-size pieces
2 medium bananas, peeled,sliced
1 apple, cut into bite-size pieces
1 cup green seedless grapes or 1 cup red seedless grapes, cut in half
1/2 cup sliced celery
Directions:
1. In large bowl, combine lemon peel and juice, oil, honey and spices.
2. Stir in remaining ingredients; chill.
3. Serve on salad greens and garnish with lemon wedges and fresh mint, if desired.
