AKA MILO'S BREAD after a boy from a book I read in first grade about a killer beet... This truly is the first thing I've completely baked in my head-it distracted me through my whole philosophy class...BEET bread! Read more ! Unique savory flavor, with, of course, Lemons! And Poppy Seeds to make it cheerful. Beautiful deep Rose color-Smell alone is worth it!! -mine looks kind of like a meatloaf, because beet juice is in the glaze ^_^ My housemate calls it Beet Loaf Ingredients:
3 cups flour |
2 tbs baking powder |
1/2 tsp salt |
3 eggs |
1 cup brown sugar |
5 tbs butter (unsalted) |
1 can beets |
2 tbs poppy seeds |
zest of 1 large lemon |
for glaze |
1/2 lemon |
1/2 brown sugar |
1/2 powder sugar |
2 tbs beet juice |
poppy seeds |
Directions:
1. Preheat hot box to 350F 2. combine flour, salt, and baking powder, set aside 3. beat sugar, butter, and eggs 4. puree beats in blender or food processor, add to wet mixture 5. add poppy seeds, lemon zest, and lemon juice to wet mixture 6. combine wet and dry 7. transfer dough to sprayed and floured loaf pan 8. Bake for 1 hour or until done (you know when its done) 9. combine glaze ingredients in saucepan over low heat 10. pour glaze over loaf while still hot and in the pan 11. once glaze is set remove from pan and cool on rack 12. Enjoy because beets are wonderful! It may scare people, but I lie and say its strawberries until they take a bite...cream cheese or jam (homemade of course) make it even better. |
