Welcome springtime (when asparagus is at its peak) with this tangy, fresh dish. Ingredients:
1 teaspoon olive oil |
3 cups (2-inch) diagonally sliced asparagus (about 1/2 pound) |
2 tablespoons finely chopped fresh flat-leaf parsley |
1 tablespoon fresh lemon juice (about 1/2 lemon) |
1/4 teaspoon salt |
1/4 teaspoon coarsely ground black pepper |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. Add asparagus; cook, stirring occasionally, 7 minutes or until crisp-tender. Remove from heat; stir in parsley and remaining ingredients. |
