14 ounces sweetened flaked coconut |
1 cup sliced almonds |
3/4 cup sugar |
1 teaspoon lemon zest, grated |
1/4 teaspoon kosher salt |
4 large egg whites |
Directions:
1. Heat oven to 325. Line 2 baking sheets with parchment paper. 2. In a large bowl, combine the coconut, almonds, sugar, lemon zest and salt. Stir in the egg whites. 3. Drop mounds of the mixture (2 T. each) onto the prepared baking sheets. 4. Bake, switching the sheets halfway through, until the edges begin to brown, 20-25 minutes. Transfer to cooling racks to cool completely. |
