Part of a shrimp recipe from Sunkist. Would be great over most any fish, veggie or eggs Benedict...anywhere you might use hollandaise sauce Ingredients:
3/4 cup white wine |
2 tablespoons shallots, minced (onions will do in a pinch) |
1 tablespoon lemon peel, grated (fresh best) |
1 cup heavy cream |
1/4 teaspoon turmeric |
1/2 teaspoon salt |
1/2 teaspoon cornstarch, mixed with 3 tbs cold water |
1/4 cup lemon juice |
Directions:
1. Combine wine, shallots and lemon peel in a small saucepan. Cook over medium heat until reduced by half. 2. Whisk in cream, tumeric and salt. Bring to a simmer while whisking. 3. Whisk in cornstarch and water mixture. 4. Remove from heat and mix in lemon juice. |
