Ingredients:
1 baked 9-inch pastry shell |
1/2 cup(s) cold water |
4 egg yolks |
1 (6-oz.) can(s) frozen lemonade concentrate, thawed and undiluted |
1/8 teaspoon(s) salt |
1/2 cup(s) sugar |
1 envelope(s) unflavored gelatin |
1 1/2 cup(s) whipping cream, whipped and divided |
Directions:
1. Combine egg yolks, suger, and salt in top of a double boiler; bring water to a boil. Reduce heat to low; cook, stirring constantly, until temperature reaches 160 degrees (about 20 minutes). Redmove egg yolk mixture from heat, and set aside. 2. Sprinkle unflavored gelatin over cold water in a small saucepan; stir and let stand 1 minute. Cook over low heat, stirring constantly, until gelatin dissolves. Stir gelatin mixture and lemonade concentrae into yok mixture. Chill unitl consistency of unbeaten egg white. 3. Fold two-thirds of whipped cream into chilled mixture; sppon into pastry shell. Chill at least 4 hours. Garnish with remaining whipped cream. |
