LEMONADE COOKIES This recipe is one of many obtained from cookie exchanges I have held for the past eighteen years. It is from my friend Marie Bumholder. Ingredients:
1 cup butter softened |
1 cup plus 2 tablespoons sugar |
2 eggs |
3 cups all purpose flour |
1 teaspoon baking soda |
6 ounce can frozen lemonade concentrate thawed and divided |
1 teaspoon lemon extract |
Directions:
1. Preheat oven to 400. 2. In large bowl cream together butter and 1 cup sugar then beat in eggs. 3. Combine flour and baking soda then add to egg mixture alternately with 1/2 cup lemonade. 4. Stir in lemon extract then drop by teaspoons onto ungreased cookie sheets. 5. Bake 8 minutes. 6. Remove from oven and brush lightly with remaining lemonade concentrate. 7. Sprinkle with remaining sugar. |
