Lemon Zucchini-Squash Saute |

Ingredients:
1 tablespoon olive oil |
2 medium zucchini, 1 lb. cut lengthwise into quarters,then into 1 1/2 inch pieces |
2 yellow squash, 1 lb. cut diagonally into 1/4 in slices |
1 clove garlic, minced |
1/2 teaspoon dried oregano |
1/2 teaspoon pepper |
1/4 teaspoon salt |
1 tablespoon lemon juice |
1 teaspoon grated lemon, zest of |
Directions:
1. In large nonstick skillet heat oil over medium-high heat. 2. Add next 6 ingredients and cook about 6 minutes or until tender, stirring occasionally. 3. Stir in juice and zest, remove from heat. |
