Quick, simple and refreshing vegetable side. The touch of lemon really dresses it up, as does the bit of Herbs de Provence. Ingredients:
4 -5 small zucchini, boiled and sliced |
2 tablespoons chopped mild onions or 2 tablespoons chopped shallots |
2 tablespoons butter |
1/2 teaspoon grated lemon peel |
2 tablespoons lemon juice |
1/8 teaspoon herbes de provence (i use a bit more, probably more like 1/4 t) |
Directions:
1. Boil and slice zucchini. Drain well. 2. Cook shallots and butter on low heat. 3. When shallots are tender, add lemon peel and juice to pan. Cook slowly for 2 minutes. 4. Add zucchini to pan and mix well. Cook until all is heated. |
