LEMON VELVET SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Wiggins Estate in Arlington, Texas in 1992. Ingredients:
1 packet lemon gelatin |
1 cup boiling water |
3 ounces cream cheese |
2/3 cup crushed pineapple with juice |
1/2 cup celery chopped fine |
1/4 cup chopped nuts |
1/2 cup heavy cream whipped |
fresh cherries for garnish |
Directions:
1. Dissolve gelatin in boiling water then add chunks of cream cheese. 2. Using mixer beat at medium speed until well blended then chill until slightly congealed. 3. Add pineapple, celery and nuts then fold in whipped cream. 4. Pour in mold and let set then turn out on lettuce leaf and garnish with cherries. |
