Lemon Vanilla French Toast |

I was surprised when I couldn't find a lemon French toast recipe here, so I came up with this...it's simple yet healthy and delicious! Ingredients:
2 eggs |
1/2 cup egg beaters egg substitute |
1 cup light vanilla soymilk |
1 dash salt |
2 teaspoons lemon zest |
8 slices italian bread |
cooking spray |
Directions:
1. Lightly beat eggs. Add egg beaters, soy milk, salt, and lemon zest. 2. Spray skillet and put over medium heat. 3. Soak bread and cook 2 at a time, until lightly browned. 4. Serve with maple syrup or fresh blueberries and vanilla yogurt. |
