Fantastic lemon flavor! Ingredients:
1/2 cup margarine |
1/2 cup sugar |
1 tbsp lemon zest |
2 eggs, separated |
1 cup flour |
1 tsp baking powder |
1/4 tsp salt |
3 tbsp lemon juice |

1 tbsp sugar |
1 tsp nutmeg |
1/4 cup chopped nuts |
Directions:
1. Cream margarine. 2. Gradually add sugar and lemon zest, beating until light and fluffy. 3. Add egg yolks one at a time, mixing well after adding each egg. 4. Sift together flour, baking powder, and salt. 5. Add flour mixture alternately with lemon juice, mixing until well blended. 6. Beat egg whites until stiff peaks form. 7. Fold egg whites into batter. 8. Spoon into greased muffin tin. 9. Combine sugar, nutmeg, and nuts and sprinkle on top of each muffin. 10. Bake at 375 degrees for 20 to 25 minutes. |
