A lemony version of the original Tiramisu. For a change I add berries to the layers and prepare in a large bowl like a Trifle. Ingredients:
syrup |
3/4c water |
1/4c sugar |
1/3c lemon juice or frozen concentrated lemonade |
filling |
3-4 lemons |
11/2c sugar |
2t cornstarch |
4 egg yolks, beaten |
2c heavy cream |
4c mascarpone cheese or cream cheese |
ladyfingers |
fresh berries (optional) |

Directions:
1. SYRUP: 2. Stir water and sugar together in a saucepan, bring to a boil. 3. Remove from heat, add the lemon juice. Cool to room temperature. 4. FILLING: 5. Grate peel from lemons and squeeze out juice. Measure out 2T peel and 1cup of juice. Stir 1cup of sugar with cornstarch in a thick bottomed pot. Whisk in juice, peel and egg yolks. Cook until thick but do not boil. Cover with directly with cling wrap to prevent skin forming. Cool. In a large bowl beat mascarpone cheese with remaining 1/2cup of sugar. Fold in cooled lemon and egg mixture. 6. Beat heavy cream to soft peaks and fold gently into cheese mixture. 7. ASSEMBLY: 8. Line bottom of shallow serving dish with ladyfingers, brush with syrup. Spread with half of the lemon cheese mixture. Repeat. 9. Cover and refrigerate for at least 4 hours. Garnish with berries. |
