Lemon Thyme Roasted Potatoes

Simply delicious. A familiar favorite with a slight twist, perfect for a summer side dish with the zesty citrus & herbal flair.
Ingredients:
2 pound yukon gold potatoes, quartered (or other potatoes of your choice)
2 tablespoon olive oil
sea salt & black pepper, freshly ground - to taste
2 tbsp fresh thyme leaves
1 tbsp lemon zest
Directions:
1. Preheat oven to 425F.
2. Place potatoes, oil, salt, pepper, thyme and lemon zest into a large mixing bowl and toss to coat.
3. Pour potatoes into 13x9 glass casserole or similar cooking vessel. Make sure all the zest & thyme makes it into pan.
4. Place in center rack of oven and bake for about 45 minutes, stirring about twice to ensure even cooking & browning.
