Lemon Thyme Roasted Potatoes |

Simply delicious. A familiar favorite with a slight twist, perfect for a summer side dish with the zesty citrus & herbal flair. Ingredients:
2 pound yukon gold potatoes, quartered (or other potatoes of your choice) |
2 tablespoon olive oil |
sea salt & black pepper, freshly ground - to taste |
2 tbsp fresh thyme leaves |
1 tbsp lemon zest |
Directions:
1. Preheat oven to 425F. 2. Place potatoes, oil, salt, pepper, thyme and lemon zest into a large mixing bowl and toss to coat. 3. Pour potatoes into 13x9 glass casserole or similar cooking vessel. Make sure all the zest & thyme makes it into pan. 4. Place in center rack of oven and bake for about 45 minutes, stirring about twice to ensure even cooking & browning. |
