600 g pork fillets, halved |
8 slices pancetta |
4 sprigs lemon thyme |
4 garlic cloves |
250 g cherry tomatoes |
1 -2 tablespoon olive oil |
olive oil, for brushing |
sea salt |
cracked pepper |
kitchen string |
Directions:
1. Preheat oven to 200C (390F). 2. Rub pork with salt and pepper, brush with oil, top with pancetta and thyme and secure with kitchen string. 3. Add oil to a baking dish and toss tomatoes and garlic. Add the pork and roast in the oven for 20 minutes or until cooked through. |
