The cookies are easy to prepare but they must be chilled for at least 6 hours before baking.These lemon delights can be used as an accompaniment to lemon sherbet or a fruit salad. Ingredients:
1 cup sugar |
1/2 cup unsalted butter, softened |
1 large egg, lightly beaten |
1/4 cup diced candied lemon peel |
2 tbsp fresh lemon juice |
2 tsp lemon zest |
2 1/2 cups all-purpose flour |
1 tsp double-acting baking powder |
1/4 tsp salt |
Directions:
1. In a large bowl, cream the sugar and butter until light and lemon colored. 2. Stir in egg, candied peel, lemon juice and lemon rind. 3. In a bowl, sift together the flour, baking powder and salt and stir the mixture into the sugar mixture. 4. Form the dough into a 12-inch long strip on a doubled sheet of waxed paper. 5. Roll it tightly into a 12-inch long roll using the wax paper as a guide. 6. Chill dough, wrapped in waxed paper and aluminum foil, for at least 6 hours. At this point, the dough can frozen. 7. Grease the baking sheets and preheat the oven to 400 degrees. 8. Cut the roll into 1/4-inch slices with a sharp knife, arrange the slices 2 inches apart on the baking sheets, bake the cookies in the middle of the oven for 10 minutes. 9. Transfer the cookies to a rack to cool. |
