Light wafers with a tart lemon filling. Quite English and lovely. Betty Crocker's Best Of Baking. Ingredients:
1 cup margarine or butter |
1/2 cup sugar |
1 tbs. grated lemon peel |
1/ tsp. salt |
1 egg |
2 cups all-purpose flour |
1/2 cup ground pecans |
1 cup lemon curd or pie filling |
lemon glaze |
1/4 cup powdered sugar |
1 tsp. grated lemon peel |
2 tsp. lemon juice |
to make lemon glaze, mix the three ingredients until smooth. |
Directions:
1. Mix margarine or butter, sugar, lemon peel, salt and egg in large bowl until well blended. 2. Stir in flour and pecans. 3. Cover and refrigerate 1 hour or until firm. 4. Heat oven to 350 degrees. 5. Roll half of dough at a time about 1/8-inch thick on floured surface. 6. Cut into 2-inch rounds. 7. Place on ungreased cookie sheet. 8. Bake 7 to 9 minutes or until edges are just barely brown. 9. Remove from cookie sheet. 10. Cool completely. 11. Put cookies together in pairs using rounded teaspoonful lemon curd for filling. 12. Prepare Lemon Glaze and brush on tops of cookies. |
