I clipped this recipe years ago out of Star Weekly Magazine but never got around to trying it until now, and that was because I had half a package of cream cheese to use up. My daughter said this is one of the best things she's eaten in ages so I decided to share this with the world! Ingredients:
1 (9 inch) graham wafer crust |
4 ounces cream cheese |
1 cup cottage cheese |
1/4 lb unsalted butter |
1 cup granulated sugar |
3 eggs |
1/2 cup ground almonds |
1/4 teaspoon almond extract |
1/2 teaspoon ground cinnamon |
3 lemons, juice and zest of |
1/2 cup almonds, sliced |
Directions:
1. Cream the cheeses with the butter and sugar. 2. Add all but the last ingredient, mixing well. 3. Pour into the crust. 4. Sprinkle with the sliced almonds. 5. Bake in a 375 degree F oven for 45 minutes, or until the top puffs up and is nicely browned. |
