Ingredients:
3/4 cup(s) butter softened |
1 egg |
1 box(es) lemon cake mix |
1 cup(s) yellow cornmeal |
2 tablespoon(s) shredded lemon peel |
coarse granulated sugar |
Directions:
1. Preheat oven to 375 degrees. In a large mixing bowl, beat butter and egg with an electric mixer. Gradually beat in cake mix until combined. Stir in cornmeal and lemon peel. 2. Using 1 tablespoon of dough for each cookie, roll into balls. Roll in sugar. Place 2 inches apart on ungreased cookie sheets. Bake for 9-10 minutes or until set. Let cool on the cookie sheet for 1 minute; transfer to a wire rack to cool completely. |
