Christmas cookie.... Ingredients:
125 g butter, softened |
3/4 cup caster sugar |
1 egg |
2 teaspoons finely grated lemons, zest of |
2 cups flour |
1 cup icing sugar |
2 teaspoons butter, softened |
1 tablespoon lemon juice |
boiling water (to mix) |
silver cachous (to decorate) |
Directions:
1. Cream butter and sugar until light and fluffy. 2. Add egg and lemon zest. 3. Beat well. 4. Sift flour. 5. Stir into creamed mixture, mixing to a soft dough. 6. Shape dough into a ball. 7. Cover with plastic wrap and refrigerate for 30 minutes. 8. Roll dough out on a floured surface to a thickness of 5mm. 9. Using a star shaped cutter, stamp out shapes. 10. Place on greased oven trays. 11. Bake at 180C degrees for 12 minutes until lightly golden. 12. Cool on wire racks. 13. -Icing-. 14. Sift icing sugar in a bowl. 15. Mix in butter and lemon juice. 16. Add just enough water to achieve a spreadable consistency. 17. When biscuits are cold, spread with lemon icing and decorate with the cachous. |
