easy and so fresh tasting, perfect for summer and spring! Ingredients:
3/4 cup butter, room temp |
1/2 cup powdered sugar |
2 tablespoons powdered sugar |
1 1/2 cups flour |
4 eggs |
1 1/2 cups sugar |
1/4 cup flour |
2/3 cup lemon juice, fresh squeezed |
1 tablespoon lemon zest (optional) |
1 teaspoon baking powder |
1 pinch salt |
1/4 cup powdered sugar |
Directions:
1. cream butter with 1/2 cup + 2 tbs powdered sugar until creamy. 2. beat in flour to form crumbs and press into a foil lined and greased 13x9 baking dish (can use 9x9 for thick bars). 3. bake at 350 for 20 minutes. 4. while baking beat 4 eggs with the granulated sugar until very pale. 5. beat in flour, lemon juice, zest, b. powder and salt. 6. pour over hot crust and reduce oven to 325 7. bake 20-25 minutes. 8. cool and sift more powdered sugar (about 1/4 cup) over the bars, refrigerate. |
