Very simple and easy. Makes a tasty little dessert. Ingredients:
1/2 cup butter, softened |
1/4 cup icing sugar, sifted |
1/2 teaspoon salt |
1 cup all-purpose flour |
2 eggs, beaten |
1 cup granulated sugar |
2 tablespoons all-purpose flour |
1 1/2 teaspoons grated lemon zest |
2 tablespoons lemon juice |
2 tablespoons icing sugar |
Directions:
1. Preheat oven to 350°F. 2. Lightly grease an 8-inch square cake pan. 3. Beat butter and confectioner's sugar until smooth and creamy. 4. Beat in salt, then gradually blend in flour until a soft dough forms. 5. Press evenly into prepared pan. 6. Bake in preheated oven for 20 minutes or until lightly browned. 7. Place pan on a rack to cool slightly. 8. In a bown mix together eggs, sugar, remaining 2 tbsp flour, zest and juice until blended. 9. Spoon evenly over warm base. 10. Bake 20 to 25 minutes longer. 11. Remove from oven and sift confectioner's sugar over top. 12. Place pan on a rack to cool completely, then cut into squares. |
