This is my mother's recipe and I have always loved it. Quick and easy to prepare. When I don't have time to make my own lemon filling, I prefer Jello lemon pudding and pie filling (the kind you cook, NOT the instant). Ingredients:
1 3/4 cups cracker crumbs |
1 teaspoon baking powder |
3/4 cup flour |
1/2 cup white sugar |
3/4 cup butter |
1/2 cup flaked coconut |
2 tablespoons milk |
lemon pie filling mix |
Directions:
1. Mix first 7 ingredients together. Press half the mixture onto the bottom of an 8 x8 pan. 2. Bake at 350° for 8 minutes. 3. Prepare lemon filling. Pour over the mixture in the pan. Sprinkle with the rest of the crumbs. 4. Return to oven and bake until top starts to brown a little, about 30 minutes. Watch closely so the squares do not burn. |
