For those lemon lovers, this is a very nice recipe, the only change I made to the original is I added 2 Tbsp. lemon zest, added just that much more lemon flavor!! Ingredients:
1 cup butter |
1/2 cup icing sugar |
2 cups flour |
3 large eggs |
2 cups sugar |
5 tablespoons flour |
6 tablespoons fresh lemon juice |
2 tablespoons lemon zest |

Directions:
1. BASE: Mix with pastry blender. Pat firmly into 13x9-inch baking pan and bake at 350F for 20 minutes. 2. FILLING: Mix together eggs, sugar, flour, lemon juice and lemon zest. Spread on base. Bake 20-25 minutes. 3. Cool completely. Cut into squares. 4. Top with icing sugar while still warm. Place back inside the turned-off oven with door open for 2-3 minutes more. This prevents beading. |
