Lemon spread for toast or cake. Great on english muffins or crumpets! Ingredients:
1/2 cup sugar |
1 large egg |
3 tablespoons lemon juice |
2 tablespoons butter |
Directions:
1. Beat egg well. 2. In small saucepan, stir together all ingredients. 3. Without bringing to a boil, cook over moderately low heat, stirring constantly, until mixture thickens-about 5 minutes. 4. Cover and chill about 1 hour. |
