Lemon Sponge Pie

This is perfect for summer entertaining! Really simple and not expensive.
Ingredients:
3/4 cup sugar
1/4 cup melted butter
1/4 cup flour
grated rind of 2 lemons...don't use the white flesh
1/4 cup fresh lemon juice (see...nothing wasted!)
1 cup whole milk
2 eggs, separated
dash of salt, that's my way of measuring anyway
1 9-inch pie crust, unbaked. (can also use graham cracker crust)
preheated 350 degree oven.
Directions:
1. Mix sugar, butter, flour, lemon rind and lemon juice, milk and egg yolks.
2. Beat egg whites with salt until stiff, but not dry.
3. Fold into first mixture.
4. Pour into prepared pie crust in pan.
5. Bake in preheated 350 degree oven for 40 minutes.
6. Cool before serving.
