This was my Great Grandma's recipe, it's a delicious Lemon Pie with a spongy, cake like top layer.. yumm! Ingredients:
2 eggs, seperated |
3/4 cup sugar |
1/4 cup butter, softened |
1/4 cup of all-purpose flour |
lemon zest of one medium lemon, approx. 2 heaping tsp. |
lemon juice from one medium lemon, approx. 1/4c |
1 cup milk |
1/8 tsp salt |
1/8 tsp meringue powder (optional) |
1 9 inch pie crust |
Directions:
1. Beat egg whites until stiff, set aside. 2. In mixing bowl, cream butter and sugar together, set aside 3. In large bowl, combine flour, lemon zest, lemon juice, milk, egg yolks, salt, meringue powder. 4. Mix in sugar and butter. 5. Fold egg whites into mixture 6. Pour directly into pie pan 7. Bake at 350° for 45 minutes or until golden brown. See Photo 8. Serves approximately six to eight, depending on how big a slice you like! ;) |
