Very good for being so strikingly simple. Ingredients:
8 ounces egg noodles |
2 tablespoons olive oil |
1 lb spinach, fresh, stems removed |
1/4 cup lemon juice, fresh |
1/4 teaspoon salt |
1/4 teaspoon red pepper flakes |
4 tablespoons parmesan cheese, grated |
Directions:
1. Boil pasta as directed on package. In the meantime, heat olive oil in large pan. Add spinach and cook until wilted (about 2 minutes) - stirring all the while. Add lemon juice, salt and red pepper flakes and stir again. Stir in noodles. Toss with Parmesan cheese and serve. (about 1 1/2 Celsius per serving). |
