A tender sweet cookie with a tart lemon filling. Delightful to look at & even better to taste Ingredients:

1 cup butter - softened |
1/2 cup icing sugar |
1 tsp lemon extract |
2 cups all-purpose flour |
1/4 tsp salt |
lemon filling |
1/4 cup sugar |
2 1/4 tsp cornstarch |
1/4 cup water |
1 tblspn butter |
1 tsp grated lemon peel |
4 1/2 tsp lemon juice |
yellow food coloring - if desired |
icing sugar for garnish |
Directions:
1. Pre-heat oven to 400 degrees 2. COOKIES:- 3. With a wooden spoon, beat butter, icing sugar & lemon extract in a medium bowl. 4. Stir in flour & salt 5. If at this point the dough is too soft to shape, place in the fridge 1 - 2 hrs until it is firm enough 6. Shape dough into 1 inch balls 7. Place about 1 inch apart on an un-greased cookie sheet 8. Flatten slightly with the flat bottom of a glass dipped in granulated sugar 9. Bake 8 - 10 mins until the edges are barely light brown 10. Immediately move to wire racks to cool 11. Put cookies together in pairs with Lemon filling 12. Sift with icing sugar |
