These are also delicious around the holidays...They are pretty when plated.... Ingredients:

1 cup butter |
1/2 cup confectioners sugar |
1 teaspoon lemon extract |
2 cups all purpose flour |
1/4 teaspoon salt |
lemon butter filling |
1 egg, lightly beaten |
2/3 cup sugar |
3 tablespoons lemon juice |
grated zest of one lemon |
1 1/2 tablespoons butter, softened |
additional confectioners sugar |
Directions:
1. In a mixing bowl, cream butter and sugar, add extract. 2. Sift together flour and salt; add to creamed mixture and mix well. 3. Roll level teaspoons into balls, flatten lightly. 4. Place one inch apart on ungreased cookie sheets. 5. Bake at 350 degrees for 8 to 10 minutes. 6. Meanwhile for filling: 7. Combine egg, sugar, lemon juice, zest, and butter in the top of a double boiler. 8. Cook over hot water stirring constantly. 9. Cool. 10. Spread filling on half the cookies and top each with another cookie. 11. Roll in confectioners sugar. 12. 2 1/2 to 3 dozen |
