Ingredients:
1/2 cup butter, softened |
2/3 cup sugar |
1 egg |
1/4 cup lemon juice |
1 tablespoon grated lemon, rind of |
1 3/4 cups all-purpose flour |
1/4 teaspoon baking soda |
1/4 teaspoon cream of tartar |
1/2 cup finely chopped almonds |
powdered sugar |
Directions:
1. In a mixing bowl cream butter,sugar and egg until well blended. 2. Add lemon juice and peel. 3. Combine flour baking soda,cream of tarter and salt,stir into creamed mixture. 4. Add almonds. 5. Cover and refrigerate the dough for at least 1 hour or overnight. 6. Roll into 1 inch balls. 7. Place on ungreased baking sheets. 8. Bake at 350 for 10-12 minutes or until bottoms are lightly browned. 9. (cookies will not brown on top). 10. Remove immediately to wire racks to cool for 5 minutes,then roll in powdered sugar. |
