If you love lemon, you will like these cookies. Ingredients:
1/2 cup butter |
1/2 cup powdered sugar |
1 1/2 cups all-purpose flour |
3/4 cup cornstarch |
1/4 teaspoon salt |
2 teaspoons grated lemons, rind of |
1 cup finely chopped blanched almond |
1 cup powdered sugar |
2 tablespoons butter, melted |
1 tablespoon lemon juice |
Directions:
1. Preheat oven to 350 degrees. 2. In mixing bowl, mix butter and sugar until light and creamy, about 2 minutes. 3. Mix in flour, cornstarch, salt and lemon peel. 4. Shape into 1-inch balls. 5. Roll in chopped nuts, pressing lightly into dough. 6. Bake for 15 minutes or until pale golden. 7. Remove to racks to cool. 8. Frosting: In a small bowl, stir together frosting ingredients until smooth. 9. Drizzle over cookies. 10. (If it is too thick, thin with a few drops of hot water). |
