My mother used to make this when I was a kid. Its both easy & tasty. Ingredients:
2 eggs |
1 package lemon flavor instant pudding and pie filling |
2 cups boiling water |
1 teaspoon sugar |
Directions:
1. Separate yolks from whites. 2. Place whites (and beaters) in freezer to cool. 3. Stir yolks& combine with lemon pie filling in a heavy saucepan. 4. Add boiling water& mix well. 5. Cook over low heat until thickened. 6. Add sugar to egg whites& whip. 7. Mix with lemon/yolk mixture. 8. Pour into dessert dishes& refrigerate. 9. Top with a dollop of whip cream (optional). |
