Had this for dinner tonight.. It was wonderful. From Great Alaska Seafood company Ingredients:
1 lb large uncooked shrimp, peeled, deveined, and butterflied |
8 oz angel hair pasta |
1 tbl extra virgin olive oil |
1 clove garlic |
1/2 cup chicken broth |
2 tbl lemon juice |
1/2 cup imported parmesan cheese, grated |
1/4 cup whipping cream |
1 tbl lemon zest |
1/2 tsp salt |
3 tbl fresh cilantro, chopped |
Directions:
1. Prepare pasta according to package directions; drain. 2. Meanwhile, heat a large skillet over medium-high heat. 3. Add oil and saute garlic for 1 minute, or until just golden; do not brown. 4. Add chicken broth and lemon juice; bring to a boil. 5. Add shrimp and cook until pink, about 3 minutes. 6. Reduce heat to low, add Parmesan cheese, cream and lemon peel; cook about 3 minutes to thoroughly heat, but do not boil. 7. Season with salt. 8. Combine shrimp mixture and chopped cilantro with the angel hair pasta; toss to mix. 9. Serve immediately. |
