These lemony, buttery cookies are easy to make. They are one of our favorite cookies and a 'must have' on Christmas cookie trays. Ingredients:
2 cups flour |
1 cup cornstarch |
1 cup powdered sugar |
1/4 cup grated lemon zest |
1 1/2 cups butter; softened |
colored sugars; optional |
Directions:
1. Combine flour, corn starch, powdered sugar and lemon rind in a large bowl. 2. With a large spoon, blend in butter, or blend in using electric mixer until a soft, smooth dough forms. 3. Roll dough to 1/4 thickness. 4. Cut into shapes with cookie cutters. 5. Place on ungreased cookie sheets. 6. Sprinkle with colored sugar. 7. Bake at 300F for 15-20 minutes or until edges are lightly browned. 8. Remove from sheet; cool completely. 9. Makes about 4 dozen 2 1/2 cookies. |
