Another junk mail recipe... advertising some cooking magazine.... but a darn good recipe if you love lemon, which I do.... Ingredients:
1 package lemon cake mix (18 1/4 oz) |
4 eggs |
1 can lemon pie filling (15 3/4 oz) |
1 package cream cheese (3 oz), softened |
1/2 cup butter or margarine, softened |
2 cups confectioners sugar |
1 1/2 teaspoons vanilla extract |
Directions:
1. In a large mixing bowl, beat the cake mix and eggs until well blended. 2. Fold in pie filling. 3. Spread into a greased 15 in x 10 in x 1 in baking pan. 4. Bake at 350 for 18 to 20 minutes. 5. Cool on a wire rack.. 6. In a small bowl, beat cream cheese, butter and confectioners sugar until smooth. 7. Stir in vanilla. 8. Spread over cake. 9. Store in refrigerator. 10. 30 to 35 servings.. |
