Lemon Seven-Minute Frosting |

Ingredients:
1 1/2 cups sugar |
2 egg whites |
1 tablespoon light corn syrup |
3 tablespoons water |
2 tablespoons lemon juice |
1 tablespoon lemon rind |
Directions:
1. Combine sugar, egg whites (at room temperature), and syrup in top of a large double boiler. Add water and lemon juice, and beat on low speed of an electric mixer for 30 seconds or just until blended. 2. Place over boiling water; beat constantly on high speed of electric mixer about 7 minutes or until stiff peaks form. Remove from heat. Add lemon rind; beat until frosting is thick enough to spread. Spread on cooled cake. |
