Lemon Scented Sugar Snap Peas |

Light and refreshing :) To make ahead: after draining wrap peas in paper towels and place in zip top plastic bag. Seal and chill 8 hours. Ingredients:
2 lbs sugar snap peas, fresh |
2 tablespoons butter |
2 garlic cloves, minced |
1 tablespoon lemon juice, fresh |
2 teaspoons lemon zest |
3/4 teaspoon salt |
1/2 teaspoon pepper, freshly ground |
Directions:
1. Cook peas in enough boiling salted water to cover for 5 minutes or until crisp-tender. 2. Drain and plunge into ice water;drain. 3. Melt butter in a medium skillet over medium-high heat;add peas and sauté 3 minutes. 4. Add garlic and remaining ingredients. Sauté 2 minutes or until thoroughly heated. |
