Lemon-Rosemary Turkey Fingers |

I found this recipe years ago in a Turkey Producers' Cookbook and I have been making it ever since. It is a family favorite. Perfect for a weekday dinner as it is quick and easy to put together. Ingredients:
1/2 cup mayonnaise |
1 tablespoon lemon juice |
1 lb turkey, cut into 3/4 inch strips |
1 cup breadcrumbs |
3 tablespoons parmesan cheese, grated |
1 tablespoon rosemary, dehydrated, crumbled |
2 teaspoons lemon rind, grated |
1/2 teaspoon paprika |
1/2 teaspoon salt |
1/4 teaspoon garlic powder |
1/4 teaspoon pepper |
3/4 cup cranberry sauce |
1/4 cup chili sauce |
Directions:
1. In small bowl, mix together mayonnaise and lemon juice; brush over turkey strips to coat. In a separate bowl, mix together breadcrumbs, parmesan and seasonings. 2. Dip turkey strips into crumbs to coat. Place on a lightly greased cookie sheet. 3. Bake at 375 degrees Fahrenheit 4 to 6 minutes each side, until no longer pink, depending on oven. 4. Serve with warm dipping sauce. 5. Dipping sauce: In small saucepan, over medium-low heat, mix together cranberry sauce and chili sauce; heat until hot. |
