Lemon Roast Potatoes (Patates Psites) |

Ingredients:
10 -12 medium potatoes |
3 -4 lemons |
1 -2 garlic clove |
olive oil |
oregano |
salt & pepper, to taste |
Directions:
1. Pre-heat the oven to 375°F. 2. Wash and cut the potatoes into quarters lengthwise 3. Place into a large, deep ovenproof baking dish 4. Drizzle with olive oil. 5. Squeeze the lemons and remove the zest from 1 or 2, crush the garlic and chop the oregano. 6. Season the potatoes well and scatter with the oregano and lemon zest 7. Bake uncovered for about 30-40 minutes or until tender. 8. Can also be placed under a very hot broiler for a few minutes to brown. 9. Serve with a squeeze of lemon juice. |
