These fritters may be sprinkled with confectioner's sugar and/or dipped into lemon curd at serving. Recipe comes from marthastewart. Ingredients:
4 cups vegetable oil for deep frying |
1/2 cup all-purpose flour |
1/2 cup cake flour |
1 tablespoon baking powder |
1 teaspoon coarse salt |
4 large eggs |
1/4 cup granulated sugar |
1 pound ricotta cheese, drained |
2 tablespoons finely grated lemon zest |
1/2 teaspoon pure vanilla extract |
confectioners' sugar for dusting |
Directions:
1. Heat oil in medium saucepan to 350 degrees. 2. Sift flours, baking powder and salt into a small bowl. 3. Mix eggs and sugar in a large bowl until just combined. 4. Add ricotta, lemon zest and vanilla until well combined. 5. Add flour mixture. 6. Stir until smooth. 7. Carefully drop dough balls (tablespoon-size), a few at a time, into oil. 8. Cook, turning 2 or 3 times until golden on all sides. 9. Adjust heat as necessary to maintain oil temperature. 10. Drain fritters on paper towels. 11. Repeat until dough is gone. 12. Place on a brown grocery bag. 13. Dust with confectioners' sugar. 14. Put lemon curd in a bowl for dipping, if desired. 15. Serve. |
