Light and delicious with strawberry or mixed berry sauce, and not too sweet. From The Onion Skin, April 2008. ricotta cheese, granulated sugar, all-purpose flour, eggs, lemons, vanilla extract, salt cvt Ingredients:
2 pounds part-skim ricotta cheese |
1/2 cup granulated sugar |
1/3 cup all-purpose flour |
5 eggs |
4 tsp fresh lemon zest (2 lemons) |
1 tsp. vanilla extract |
1/8 tsp. salt |
Directions:
1. Preheat oven to 320. Set rack in the middle of the oven. 2. Butter and flour a 9-1/2 inch springform pan and tap out excess flour. 3. Place the ricotta in a large mixing bowl and beat it until smooth. Beat in sugar and flour. Beat in the eggs one at a time. Blend in the lemon zest, vanilla, and salt. 4. Pour batter into the prepared pan. Bake in the oven for about 1 hour to 1 hour 15 minutes or until a light golden color and set in the center. 5. Cool on a wire rack. It will sink slightly as it cools. Cover and chill. To serve, cut into slices. Top with fresh or frozen berry sauce (berries and a little honey). Or try glazing the top with marmalade. |
