Ingredients:
1 cup fat-free, less-sodium chicken broth
1 cup uncooked long-grain instant rice
1/2 cup shredded carrot
3 tablespoons golden raisins
1 teaspoon grated lemon rind
2 teaspoons light butter
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Bring broth to a boil in a small saucepan over medium-high heat. Stir in rice, carrot, and raisins; remove from heat. Cover and let stand 5 minutes or until rice is tender. Add lemon rind and remaining ingredients.
