1 cup fat-free, less-sodium chicken broth |
1 cup uncooked long-grain instant rice |
1/2 cup shredded carrot |
3 tablespoons golden raisins |
1 teaspoon grated lemon rind |
2 teaspoons light butter |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Bring broth to a boil in a small saucepan over medium-high heat. Stir in rice, carrot, and raisins; remove from heat. Cover and let stand 5 minutes or until rice is tender. Add lemon rind and remaining ingredients. |
