This recipe is specifically meant to go with a shrimp dish, but would be good with many other dishes such as chicken or pork. From Cuisine at Home magazine. Ingredients:
1 cup water |
1 teaspoon lemon zest, minced |
2 tablespoons fresh lemon juice |
1/2 cup long grain rice |
salt & freshly ground black pepper |
Directions:
1. In a saucepan, bring water and lemon juice to a boil. 2. Stir in rice, cover, reduce heat, and simmer until the liquid is absorbed, about 20 minutes. 3. Stir in lemon zest; season with salt and pepper. |
