I found this recipe on . I like it because it is simple and fairly low in sodium. Ingredients:
1 cup chicken broth |
1 cup water |
1 cup long grain rice |
2 -3 tablespoons lemon juice |
2 tablespoons parsley, chopped |
Directions:
1. Combine broth and water in a saucepan over medium-high heat. Stir in rice and pepper to taste and bring to a boil. Immediately reduce heat to low. Cover and simmer 20 minutes or until rice is tender and liquid is absorbed. Remove from heat and let sit 5 minutes, covered. Sprinkle with lemon juice and parsley and fluff with a fork. |
