From Gooseberry Patch Backyard Gatherings. Ingredients:
2 teaspoons olive oil |
1 cup finely chopped onion |
1 cup sliced mushrooms |
1 3/4 cups long-grain rice, uncooked |
3 cups hot water |
1 tablespoon grated lemon rind |
2 teaspoons chopped fresh oregano |
2 tablespoons fresh lemon juice |
Directions:
1. Add oil to a large skillet over medium heat. 2. Stir/saute onion and mushrooms until tender. 3. Add in rice; saute for 1 minute. 4. Pour in hot water, lemon rind, and oregano. 5. Put the lid on the skillet and simmer for 10-20 minutes or until liquid has evaporated. 6. Remove from heat; add lemon juice and fluff before serving; taste and adjust seasoning with salt and pepper. |
