Lemon Raspberry Yogurt Muffins |

this is a good recipe to have on a Sunday or if your having a brunch... the recipe is from a Gooseberry Patch cookbook. Ingredients:
2 eggs ..beaten |
1/2 cup milk |
1/2 cup lemon yogurt |
4 tbsp. butter....melted |
1 teasp. vanilla |
2 cups flour |
1 tbsp. baking powder |
1 teasp. salt.... ( or a little less) |
1 teasp. lemon peel.... finely grated |
2/3 cup sugar |
2 cups raspberries |
lemon glaze |
2 tbsp. lemon juice |
1/2 cup powdered sugar |
1 teasp. lemon peel..... finely grated |
Directions:
1. combine eggs, milk, yogurt, butter, and vanilla 2. in medium bowl: stir together the flour, baking powder, salt, lemon peel and sugar 3. mix the yogur mixture into the flour mixture.. don't over mix 4. in 2 - 3 strokes, fold in raspberries 5. spoon into a greased muffin cups 6. bake at 350' F for 18 - 20 minutes or until tops spring back when touched 7. serve plain or brush warm muffins with a Lemon glaze 8. ..makes 12 muffins 9. .............................................................. 10. lemon glaze 11. .............................................................. 12. combine the juice, sugar and lemon peel 13. mix until smooth 14. brush over the warm muffins |
