Ingredients:
1 cup quinoa
2 cups chicken broth
2 hard-boiled eggs, whites only
1/4 yellow bell pepper, slivered
2 teaspoons slivered red onions
10 cherry tomatoes, halved
1 lemon, juice of
1 tablespoon olive oil
1/4 teaspoon cayenne pepper
Directions:
1. thoroughly rinse quinoa. bring chicken broth to a boil, then add quinoa. lower heat and simmer for 20 minutes. meanwhile, boil two eggs. sliver the onions and bell pepper and cut the cherry tomatoes in half. combine the juice of one lemon and the olive oil along with 1/4 tsp of cayenne pepper (more or less depending on taste). peel the eggs and discard the egg yolks; coarsely chop the whites. toss all ingredients together in a bowl. yields 3 1 cup servings.
