A delicious cake with a lemony sauce on the bottom. This is very similar to the hot fudge cake recipe. It is also low fat, so that means it is a healthier version of a lemon cake or pudding. Ingredients:
3 eggs, separated |
1/2 cup skim or 2% milk |
1/4 cup lemon juice |
1 teaspoon grated lemon peel |
1/2 cup sugar |
1/3 cup all purpose flour |
1/8 teaspoon salt |
Directions:
1. Heat oven to 350 degrees. Grease 1-quart casserole. In a small bowl, beat egg yolks; stir in milk, lemon juice and lemon peel. Add sugar, flour and salt; beat until smooth. 2. In another bowl, beat egg whites until stiff peaks form. Gently fold yolk mixture into beaten egg whites. DO NOT OVERBLEND! Pour into greased casserole. 3. Place casserole in 13x9-inch pan; pour hot water into pan around casserole to a depth of 1 inch. 4. Bake at 350 degrees for 25 - 35 minutes or until light golden brown. Serve warm or cool. |
